Vineyards

The particularity of Bodegas Zifar wines begins with the exhaustive care of our vineyards, some of them located in Pesquera del Duero where we grow grapes with very good acidity that provide a lot of fruit and value to our young and crianza wines, thanks to the type of soil found there. Our other vineyards are located in a very particular spot in Quintanilla de Arriba, which has a privileged altitude and soil virtues, thus achieving very special and valuable characteristics for our wines.

Our vineyards are vineyards of centenary origins in some cases, and in others with different soil characteristics.

All the grapes are harvested prior to a careful selection of the grapes, which is done by hand and in some cases under very peculiar conditions, due to the irregularities of the soil. This detailed care allows us to have a rigorous control over the berries, which we then transport in small batches to the winery, where they go through a selection table before being transferred to the different vats, where the grapes from each plot are placed.

Once the grapes have been vatted, we carry out a pre-fermentative maceration where we begin the intense pumping-over process to extract the noble components from the grapes as quickly as possible. This process continues more gently during the alcoholic fermentation at a controlled temperature.

When the fermentation is finished and once the maceration time has elapsed, the malolactic fermentation begins. And when this is finished, the wine is aged in barrels of different capacities, toasting and ageing for the appropriate time for each of our references.

In the case of our top quality wines, we rack the devatted wine directly into new French barrels, where malolactic fermentation takes place, which gives them greater complexity and quality.
