Category: Aging white wine.
Denomination of Origin: D.O. Ribera del Duero.

Grape Variety: 100% Albillo Mayor.
Vine location: aken from spread of old vines of fine red, from 9 different parcels, mainly from Anguix and Roa.
Altitude: 820 m.s.n.m

Clima: Continental mediterráneo, con claros indices de escasa pluviometría.
Harvest: Manual harvest with 15 kg boxes.

Elaboration: Direct pressing in a pneumatic press with cold maceration for 6 hours, obtaining only yolk must that after 24 hours of static racking to ferment in new French oak barrels of extra fine grain and very low toasting. It ferments at low temperature with native yeasts and does not carry out FML, intense batonnage in the first month, very low levels of sulfur, only prior to bottling.

Aging: 12 months in French oak barrels.
Alcohol level: 13 % vol.
Serving temperature: 12°C.
Production: 750 bottles of 75Cl y 24 bottles of 150Cl.

 

 

TASTING NOTES:

Appearance: Pale color due to its special and extreme care against oxidation, a very particular yellow with gray tones is the result of its complex process.
Nose: Complex nose with white fruits, jasmine flowers, a hint of syrup with a peachy background. Its aromas unfold slowly and elegantly, made to be enjoyed.
Mouth: Powerful, despite spending 12 months in the barrel, its structure is barely noticeable, giving power to the variety and above all, excellent texture on the palate, volume, length and freshness, a long finish with elegance and persistence.
Pairing: With fatty fish, such as Turbot or Sea Bream. Perfect with fresh grilled foie and all poultry stews.
