Altitude: 840m s.n.m.
Harvest: Manual in boxes of 10Kg.
Elaboration: Pre-fermentation maceration in a refrigerated chamber at 5ºC for 24 hours. Fermentation takes place partly in wooden containers and stainless steel.
Aging: 12 months in French oak barrels
Alcohol level: 14,5 % vol.
Serving temperature: 14- 16 º C .
Appearence: Intense red cherry.
Nose: Very marked with aromas and a good balance of fruit and wood, where the vanilla tones are mixed with well-ripened fruit, blackberries and wild fruits. Very slight hints of leather and liquorice that result from the mixture of French oak wood and the aromas inherent in this variety of grape.
Pairing: Excellent combination with cold meats, pasta dishes and spicy stews. In particular perfect with stews, grills, roasts of suckling lamb, roast suckling pig, red meat stews and delicate poultry.
